Trinbagonian Sweet Rice Recipe
Yield: 15 - 20 Servings
Water - 6 cups or more if needed White Rice - 2 cups Cinnamon Stick - 1 Cloves - 5 Cardamom Pods - 4 Moo Condensed milk - 700g Moo Evaporated Milk - 500ml Mixed Essence - 2 tsp Golden Raisins - 1/2 cup Maraschino Cherries - 1/4 cup (quartered)
Add water to medium sauce pan and bring to a boil.
Add rice and cinnamon.
Reduce heat to medium and allow rice to cook and get very soft.
Once rice is soft, add cloves, cardamom, condensed milk, evaporated milk and essence.
Stir over medium heat until the mixture thickens to your desired consistency.
Once thickened, remove from heat and add raisins and cherries.
