Tobago Coconut "Crack Back" Biscuits Recipe


Yield: 36 Cookies

INGREDIENTS

Granulated Sugar - 1 1/2 cups

Butter - 4 oz (room temperature)

Egg - 1

Milk - 1/8 cup

Mixed Essence - 1/4 tsp

Flour - 4 cups

Baking Powder - 1 tsp

Grated Coconut - 3 cups

METHOD

  1. Preheat oven to 350°F.

  2. Mix egg, milk and essence. Set aside.

  3. Mix flour and baking powder. Set aside.

  4. Using a cake mixer or spatula, cream the sugar and butter.

  5. Add egg, milk and mixed essence mixture.

  6. Mix until fully incorporated.

  7. Add flour and baking powder; 1/2 at a time.

  8. Mix until fully incorporated.

  9. Using a spatula, mix in grated coconut.

  10. Once fully incorporated, spoon the dough into a greased baking sheet as illustrated in the video.

  11. Bake until golden brown (about 30 minutes).

  12. Remove from baking sheet and allow to cool.

  13. Enjoy!
