Fried Bake & Lionfish Recipe by Chef Shaun 🇹🇹


Fried Bake is a type of bread that is fried until golden brown, creating a crispy exterior while maintaining a soft and fluffy interior. Fried Bake is often enjoyed as a breakfast item or as a side dish with various savory or sweet accompaniments.


Lionfish are an invasive species that are currently inflicting longstanding damage to our eco-system by eating many of our local fish. They are able to do this because they have very few natural predators, likely due to their venomous spines. One simple, but very effective way to help deal with this problem is to eat them.


Yield – 12 Servings.


Ingredients


Green Seasoning


Chive- ½ cup.

Chadon Beni- 1 cup.

Garlic- 3

Ginger- 2 tsp

Thyme- 1 sprig.

Hot pepper- 1/2 or to taste (seeds optional)

Water- ¼ to ½ cup.


Seasoning Lionfish


Lionfish- 12 fillets

Lime- 1

Salt- 2 tsp or to taste.

Black pepper- ½ tsp or to taste.

Green seasoning- 1 cup.


Fried Bake


All-Purpose Flour- 4 cups

Salt- 2 tsp

Sugar- 1 tsp

Baking Powder- 4 tsp

Water- 1 ½ cups.

Vegetable Oil for Frying- 3 to 4 cups.


Method


1. Make your Green Seasoning.

2. Set aside.

3. Wash and season your lionfish.

4. Allow excess water to drain.

5. Season your fish.

6. Set aside.

7. Combine all your Fried Bake ingredients and knead to a smooth ball of dough.

8. Preheat your oil to 350F.

9. Roll out your Bakes as illustrated and fry before you fry your fish.

10. Fry until golden brown in colour.

11. Allow excess oil to drain off.


Chadon Beni Sauce


Chadon Beni- ½ cup.

Water- ¼ cup

Garlic- 4 cloves

Hot Pepper- 1 tsp or to taste.

Salt- 1/8 to ¼ tsp


Add all ingredients to your blender and blend into a smooth consistency.


Garlic Sauce


Water- ¼ cup.

Garlic- 17 cloves

Chadon Beni- 6 leaves (opt.)

Sugar- ¼ cup.

Mayonnaise- 2 ½ cups.


Add all ingredients to your blender and blend into a smooth consistency.


Mango Amchar


Mango - 2 (washed, cleaned & grated)

Salt – ½ tsp or to taste.

Amchar Powder - 1 tsp

Cumin (Geera) Powder - 1/4 tsp or to taste (opt)

Hot Pepper - 1/2 tsp or to taste (opt)


Add all your ingredients to a bowl and mix until evenly incorporated.
