How To Make Roasted Geera Chicken Loaded Nachos
Geera Chicken Nachos?! Allyuh know we had to take up this challenge from our friends at Old El Paso!
Yield - Serves 6 Persons
Cook time – Approx. 1hr
Seasoning of Chicken – 10 minutes
Marinating time – 4hrs or overnight
Ingredients:
Whole Chicken – 3 lb. (cleaned and gutted)
Washing of chicken
Lime juice – 4tbsp
Water - 6 cups
Seasoning mix
Salt to taste
Black pepper - 1 tbsp
Ground Geera (Cumin) - 3tbsp
Garlic - 2 tbsp (finely chopped)
Coconut oil – ¼ cup
Salsa
Tomato – 1 lb. (Diced)
Chadon Beni – ¼ cup (finely chopped)
Red Onion – 1/3 cup (Diced)
Lime Juice – 2 tbsp
Salt – ½ tsp or to taste
Black Pepper – ¼ tsp or to taste
Method:
Washing of Chicken
Place whole chicken in a large bowl.
Add lime juice and six (6) cups of water.
Allow to soak for 5 minutes.
Rinse chicken under running water.
Allow excess liquid to drain off.
Seasoning of chicken
In a large bowl season cleaned whole chicken with seasoning mix.
Allow to marinate for at least 4 hours.
Cooking of chicken.
Pre heat oven to 375 degrees F.
Put in oven and cook for 50 minutes to 1 hour.
Cook until chicken is golden brown on the outside and is cooked on the inside.
Using a food thermometer, check internal temperature of chicken. (Internal temperature should be over 165℉)
Once out of oven; cover with foil and allow to rest until cool enough to pull apart with a pair of forks.
Making of Salsa.
Add all ingredients into a bowl and mix until well incorporated.

Start with a layer of Chips
Add the shredded chicken
Add the salsa
Add cheese and enjoy!
