How To Make Trini Fry Aloo
There are few things more satisfying than some good Fry Aloo and Sada on a morning, except, Dev forgot the Sada!
Half cup of vegetable oil
3 lb bag of potatoes
4 pimento peppers, chopped
1-2 onions, diced
3-4 cloves of garlic, chopped
1 small hot pepper, chopped
1 tbsp Salt
half tbsp black pepper
1. Cut potato into halves, then quarters, then into 1 inch thick pieces. Make sure all pieces are roughly equal size. Leave in basin covered with water.
2. Finely chop all seasonings, sauté in half cup of oil in hot cast iron pan or pot until onions are translucent.
3. Strain and add in potato, mix well. Add salt and black pepper.
4. Cover and reduce heat to medium, turning occasionally. The bottom of the potato will stick to the pot, so scrape to release the brown crust. Repeat the turn and scrape method until the potato is soft with lots of brown crust, or at least until the potato is soft, if you don't prefer too much brown crust.
