Trini Cranberry Sauce Recipe by Chef Jeremy Lovell
Yield: Serves 8 to 12 Persons
Cook Time: Approx. 45min
Ingredients:
Dried Cranberries – 1 cup
Cranberry Sauce – 1 tin
Chive - 1 tbsp (chopped finely)
Parsley – 1 tbsp (chopped finely)
Celery - 2 tbsp (chopped finely)
Fine Thyme - 1 tsp (chopped finely)
Pimento Peppers – 1 tbsp (chopped finely)
Garlic – 2 tbsp (chopped finely)
Chadon Beni/Culantro – 1 tbsp (chopped finely)
White Sugar – ½ cup
White Onion – 2 tbsp (chopped finely)
Star Anise - 1
Cinnamon Stick – 1
Salt - to taste
Black Pepper - to taste
Water – 2 cup
White Vinegar – 2 tbsp
Method:
Place medium sized pot on stove turn over medium heat.
Add all ingredients and allow to simmer over low heat for 45 minutes.
After 45 minutes, sauce should coat the back of your spoon.
Taste for salt and remove from heat.
