Vegan Oyster Mushroom Accra Recipe
INGREDIENTS
2 cups flour
2 tsp baking powder
1 small bundle garlic chives
1 small bundle chadon beni
1 lb oyster mushrooms
2 tbsp green seasoning
1/8 tsp turmeric powder
1 tsp paprika
2 tsp salt
1-1.5 cups water
METHOD
1.Shred mushrooms into bite-sized pieces.
2.Season with green seasoning, turmeric, 1tsp salt, paprika & mix well. Set aside to marinate while you mix dry ingredients.
3.In another bowl mix flour, baking powder, 1 tsp salt ,chadon beni and garlic chives.
4.Add the marinated mushrooms to dry mix & add water till it reaches a batter consistency.
5.Heat frying oil & scoop 1 tbsp batter into hot oil & fry until golden brown.
6.Drain excess oil on paper towel.
7.Serve with a sauce of your choice.
