Quick & Easy Egg Salad Recipe
Eggs - 6 large
Salt - to taste
Black Pepper - to taste
Chopped Chive (Scallions) - 1/4 cup (optional)
Mayonnaise - 1/2 cup or more
Mustard - 1/2 tbsp
Add eggs to a pot over medium heat, cover with water and allow to boil for 15-20 minutes.
Strain and allow to cool.
Once cooled, remove shell and wash eggs.
Place eggs into a bowl and cut into small cubes.
Add salt, black pepper and chive.
Add mayonnaise and mustard.
Mix well until all the ingredients are fully incorporated.
