Cassava Roast Bake Recipe by Gizelle & Shaun 🇹🇹

Aunty Gizelle shows us how she makes her popular Roast Bake, except this time it’s with Lotus Cassava Flour:

Yield – One 12” Round Bake


All Purpose Flour – 2 ½ cups

Lotus Cassava Flour – 1 ½ cups

Lion Brand Baking Powder – 4 tsp

Salt – 1 tsp

Brown Sugar – 1 tbsp

Instant Yeast – ½ tsp

Margarine – 3 oz

Shortening – 1 oz

Room Temperature Water – 11 fl. Oz.


1. Mix flours, baking powder, salt and sugar in a bowl until evenly incorporated.

2. Add yeast and mix until evenly incorporated.

3. Cut in margarine & shortening into small even pieces as illustrated in the video.

4. Make a well in the middle and add most of your water.

5. Mix and begin to knead until mixture turns into a rough ball of dough.

6. Lightly dust with flour, cover and allow to rest for 30 minutes.

7. Punch and continue to knead until dough look and feels smoother.

8. Cover with a damp cloth and allow to rest for 1 hour (allow to rest in a sealed container in your fridge overnight for best results).

9. Preheat your oven to 350 F.

10. Grease a round pizza tray or anything similar.

11. Spread your dough out until it reaches 12” in diameter.

12. Bake until your bake turns golden brown in colour.

13. Remove from oven and immediately brush with butter.

14. Allow to cool for 20 minutes before enjoying!
