Flavorful Christmas Rice Recipe by Shaun, Michelle & Gizelle 🇹🇹
In the kitchen today Gizelle and Michelle help Shaun prepare a pot of flavorful Christmas Rice:
Yield – 12 to 15 Servings
Ingredients
Margarine – 4 oz
Turmeric Powder – 1 tbsp
Cinnamon Stick – 1
Salt – 1 ½ tbsp
Black Pepper – ¾ tbsp
Raisins – 1 cup
Onion – 2 cups (finely chopped)
Pimento – 1 cup (finely chopped)
Garlic – ¼ cup (finely chopped)
Carrots – 2 cups (shredded)
Corn Kernels – 2 cups
Sliced Mushrooms – 1 cup
White Parboiled Rice – 3 lbs
Method
1. Heat large pot over high heat.
2. Once heated, add margarine.
3. Once margarine is melted and bubbling around the edges, add turmeric, cinnamon, salt, black pepper & raisins.
4. Reduce heat to low and allow flavorings to steep in margarine (about 2 minutes).
5. Raise heat to medium, add onion and pimento and allow to cook until translucent (about 2 minutes).
6. Add garlic, carrots, corn & mushrooms.
7. Mix until all your ingredients are evenly incorporated.
8. Add rice and mix until evenly incorporated.
9. Cover with water.
10. Raise heat to high, bring mixture to a boil before reducing heat to a simmer.
11. Once simmering, covering and allow rice to cook (about 15 to 20 minutes).
12. Check for doneness and taste for salt.
