Trini Beef Soup Recipe by Chef Jeremy Lovell
Yield: 6 Servings

Marinating Time: 4 hours.
Prep Time: 30mins
Ingredients:
Beef (cut into 2” pieces) - 3lb
Washing of Beef
Lime Juice – 4 tbsp
Water – 6 cups
Seasoning Ingredients:
Pimento Peppers – 8 (finely chopped)
Chive – 3 tbsp (finely chopped)
Fresh Thyme – 1tbsp (finely chopped)
Garlic – 3 tbsp (peeled and finely chopped)
Chadon Beni – 4 tbsp (finely chopped)
Bay leaf – 1
Salt to taste
Black Pepper – 1 tbsp
Onion – 2 tbsp (cut into large cubes)
Hot Pepper – 1 (Optional)
Other Ingredient for Soup:
Water – 3 tbsp
Hot Pepper – 1
Carrots – 4oz (cut into large cubes)
Potatoes – 4oz (cut into large cubes)
Pumpkin – 4oz (cut into large cubes)
Fine Thyme – 2 oz (finely chopped)
Pimento Peppers – 3tbsp (roughly chopped)
Garlic – 4 cloves (peeled and crushed)
Butter – 4oz
Dumpling Dough:
Flour – 2 cups
Water – 1 cup
Method:
Washing of Beef
In a large bowl, add beef, water and lime juice.
Stir for 3mins and allow to soak for a further 5mins.
After soaking rinse beef under running water for 3mins.
Drain off excess water.
Seasoning of Beef:
In a large bowl add washed beef and all seasoning ingredients.
Mix thoroughly for 3mins.
Cover and allow to marinate for at least 4 hours.
Making Dumplings:
Add water and flour in large bowl.
Mix and knead until dough comes together.
Roll dough out and cut into 2inch pieces.
Cooking of Beef Soup:
Place soup pot on stove over medium to high heat.
Add butter and seasoned beef and allow to cook for 5 mins; stirring occasionally.
Add enough water to cover beef and allow to cook for a further 45mins.
After 45mins, check beef for tenderness. If beef is soft, add all other ingredients except dumplings (If beef is still tough, cover and allow to cook for a further 15 mins).
Add more water to cover ingredients
Reduce heat to medium.
Cover pot and allow to cook for another 45mins.
Check for tenderness of provisions & vegetables
Once they are cooked 75% of the way, add dumplings and allow to cook for 10 to 15 mins.
Taste for salt and enjoy.
Note: Allowing the whole Hot Pepper to burst will make the soup spicy and undesirable to some!
