Washing of Beef

 In a large bowl, add beef, water and lime juice.

 Stir for 3mins and allow to soak for a further 5mins.

 After soaking rinse beef under running water for 3mins.

 Drain off excess water.

Seasoning of Beef:

 In a large bowl add washed beef and all seasoning ingredients.

 Mix thoroughly for 3mins.

 Cover and allow to marinate for at least 4 hours.

Making Dumplings:

 Add water and flour in large bowl.

 Add enough water to cover beef and allow to cook for a further 45mins.

 After 45mins, check beef for tenderness. If beef is soft, add all other ingredients except dumplings (If beef is still tough, cover and allow to cook for a further 15 mins).

 Add more water to cover ingredients

 Reduce heat to medium.

 Cover pot and allow to cook for another 45mins.

 Check for tenderness of provisions & vegetables

 Once they are cooked 75% of the way, add dumplings and allow to cook for 10 to 15 mins.

 Taste for salt and enjoy.

Note: Allowing the whole Hot Pepper to burst will make the soup spicy and undesirable to some!
