How To Make Cheese/Tuna/Chicken Spread

CHEESE PASTE

 

INGREDIENTS | Yield: 8 – 10 Portions

 

2 Cups Cheddar Cheese, shredded

3 Tbsp Shredded Carrots

2 Tbsp Minced Onions

1 Tbsp Mustard

1 Tbsp Butter, softened

½ Cup Mayonnaise

1 Tsp Parsley Flakes

½ Tsp Pepper Sauce

½ Tsp Salt

¼ Tsp Black Pepper

 

METHOD

 

In a large mixing bowl, add in all the ingredients. With a rubber spatula, mix until well combined and mayonnaise is integrated into the cheese with other spices to form a paste.

TUNA PASTE

 

INGREDIENTS | Yield: 8 Portions

 

3 Cans (3.5 oz) of Tuna, water drained

3 Tbsp Onions, Finely Minced

2 Tbsp Celery, Finely Chopped

1 Tbsp Pimentos, Finely Minced

½ Tsp Paprika Powder

¼ Tsp Pepper Sauce

½ Cup Mayonnaise

2 Tsp Lemon Juice

½ Tsp Salt

¼ Tsp Black Pepper

 

METHOD

 

In a large mixing bowl, add in all the ingredients. With a rubber spatula, mix until well combined and mayonnaise is integrated into the tuna with other spices to form a paste.

CHICKEN PASTE

 

INGREDIENTS | Yield: 6 Portions

 

12 oz of Cooked Chicken Breast, Boiled or Roasted

3 Tbsp Chopped Celery

2 Tbsp Chopped Chives

2 Tsp Minced Chadon Beni/Culantro

1 Tsp Oregano Flakes

½ Cup Mayonnaise

½ Tsp Pepper Sauce

Salt & Black Pepper to taste

 

METHOD

 

  1. Take cooked chicken and remove any skin, bone or cartilage that may be present.

  2. Place chicken into a bowl and using your clean finger tips, carefully strip the chicken breast into pieces as though you are pulling it in strips and chunks.

  3. To the bowl, add in all the other ingredients. With a rubber spatula, mix until well combined and mayonnaise is integrated into the chicken strips with other spices to form a paste.
