Trini-Chinese Char Siu Pork Recipe by Chef Jeremy Lovell


Yield - 6 Servings.

Cook Time – Approx. 90 minutes.

Prep Time: 30 minutes.


Ingredients:

 Boneless Pork Shoulder or Tenderloin – 3lb


Washing of Pork:

 Lime Juice – 4 tbsp


Marinade:

 Soy Sauce – 4oz

 Honey – 2oz

 Ketchup – 3oz

 Brown Sugar – 2oz

 Chinese Rice Wine – 4oz

 Hoisin Sauce – 2 tbsp

 Red Food Coloring – 1 tsp

 Five Spice Powder – 1 tsp

 Ginger Powder – 1 tsp

 Garlic Powder – 1 tsp

 Salt to taste


Method:

 Place pork, lime juice into a bowl and fill with water.

 Mix thoroughly and allow to soak for 10 minutes.

 Rinse pork under running water, drain off excess liquid.

 Place pork into a large ziplock bag.

 Add all seasoning ingredients to pork and massage into pork.

 Seal and allow to marinate over night.

 Pre heat oven at 325 degrees Fahrenheit.

 Remove pork from ziplock bag, place on baking tray and place in oven.

 Allow to cook for 1-1 hr & 15 mins.

 Place marinade into a small pot and cook over medium heat until mixture reduces by half.

 Set aside.

 Check pork for doneness.

 Once fully cooked, remove from oven, cover and allow to rest for 20 mins before slicing.
