Trini-Chinese Char Siu Pork Recipe by Chef Jeremy Lovell
Yield - 6 Servings.
Cook Time – Approx. 90 minutes.
Prep Time: 30 minutes.
Ingredients:
Boneless Pork Shoulder or Tenderloin – 3lb
Washing of Pork:
Lime Juice – 4 tbsp
Marinade:
Soy Sauce – 4oz
Honey – 2oz
Ketchup – 3oz
Brown Sugar – 2oz
Chinese Rice Wine – 4oz
Hoisin Sauce – 2 tbsp
Red Food Coloring – 1 tsp
Five Spice Powder – 1 tsp
Ginger Powder – 1 tsp
Garlic Powder – 1 tsp
Salt to taste
Method:
Place pork, lime juice into a bowl and fill with water.
Mix thoroughly and allow to soak for 10 minutes.
Rinse pork under running water, drain off excess liquid.
Place pork into a large ziplock bag.
Add all seasoning ingredients to pork and massage into pork.
Seal and allow to marinate over night.
Pre heat oven at 325 degrees Fahrenheit.
Remove pork from ziplock bag, place on baking tray and place in oven.
Allow to cook for 1-1 hr & 15 mins.
Place marinade into a small pot and cook over medium heat until mixture reduces by half.
Set aside.
Check pork for doneness.
Once fully cooked, remove from oven, cover and allow to rest for 20 mins before slicing.

No mention of using the marinade.
Do we dip the slice meat in marinade or ?????
