Trini-Chinese Lemon Chicken Recipe by Chef Jeremy Lovell
Yield – Serves 6 persons
Cook Time – 1 hour
Marinating Time - 1 hour
Prep Time – 30 mins.
Ingredients:
Boneless Chicken breast (cut into 2” strips) - 3lb
Washing of Chicken
Lime Juice – 4 tbsp
Water – 6 cups
Seasoning Ingredients:
Garlic – 3 tbsp (peeled and finely chopped)
Five Spice Powder – 1 tsp
Ginger – 1 tbsp (finely chopped)
Salt to taste
Black Pepper – 1 tbsp
Ingredients for Lemon Sauce:
Lemon Juice – 8oz
White Wine Vinegar – 2 tbsp
Granulated Sugar – 2/3 cup
Salt – to taste
Garlic – 1 tbsp (finely chopped)
Water – 4oz
Cornstarch – 4 tsp
Sesame Seeds – 1 tbsp (optional)
For Frying:
Vegetable Oil – 4 cups
Flour – 3 ups
Whole Egg – 2 Large
Method:
Washing of Chicken:
In a large bowl add cut up chicken, water, and lime juice.
Stir for 3minutes and allow to soak for a further 5minutes.
After soaking rinse chicken under running water for 3minutes.
Seasoning of Chicken:
In a large bowl add washed chicken and all seasoning ingredients.
Mix thoroughly for 3minutes.
Allow to marinate for at least 1 hours.
How to make Lemon Sauce:
Using a small sauce pot add all ingredients under recipe for lemon
sauce except cornstarch.
Bring to a boil then whisk in corn starch a little at a time or until
desired texture.
Cooking of Chicken:
Place heavy iron pot of skillet on stove, turn on heat and add oil.
Using two separate medium size bowl add flour in whole and whisk egg in the other.
When oil is hot, dip chicken strips in flour then in egg, then back in flour again and place in hot oil to fry.
Fry until golden brown or until chicken is cooked.
When chicken is cooked place on serving dish, pour lemon sauce over chicken and sprinkle toasted sesame seeds.
