How To Make Trini Bread Pudding
Yield: 12 (3 oz) Portions
INGREDIENTS
2 Cups Sugar 6 Eggs 4 Cups Milk 2 Tsp Vanilla Extract 1 Tsp Cinnamon Powder ½ Tsp Nutmeg Powder 6 Dashes Bitters ¼ Tsp Salt 1 Cup Raisins ½ Cup Mixed Peel 6 Cups Cubed Hops Bread (About 7 Hops) or White Loaf Bread
METHOD
Preheat the oven to 350 degrees Fahrenheit.
Lightly grease a 10” x 9” baking dish with Vegetable Oil.
In a large bowl, whisk together granulated sugar and eggs until both ingredients come together. Now add the milk, vanilla, cinnamon, nutmeg, bitters, salt and whisk vigorously until combined. Add the raisins and mixed peel and stir.
Add the cubed bread into the custard egg mixture. Stir to combine gently and let sit for 3 minutes to allow egg custard to absorb into bread.
Pour bread mixture into prepared dish and bake for 25 to 30 minutes, or until set. If baking in a bread loaf pan, increase cooking time to 45 – 50 minutes because of the height of the loaf pan.
Remove from oven and let cool for 15+ minutes. Cut a portion and serve warm with a scoop of vanilla ice cream atop.
