Trini Fried Pies Recipe - ALOO/BEEF/TUNA
YIELD - 8 Servings
*FC - Finely Chopped
DOUGH INGREDIENTS
Flour - 2 Cups
Salt - 1 Tsp
Sugar - 1/2 Tsp
Baking Powder - 2 Tsp
Butter - 1 oz
Water - 3/4 Cup
Oil - For Frying
METHOD
Sift together all dry ingredients into a bowl.
Cut in the butter until it resembles cornmeal.
Add water and knead until the dough forms. (5-10 minutes)
Cover and let rest for 15 minutes.
Divide the dough into 8 balls, cover and let rest for 10 minutes.
Roll out the balls using a rolling pin into 5" inch discs.
Once all the balls are rolled out brush off the excess flour.
Fill with 2 tablespoons of filling.
Lightly brush the edges with water and seal.
Cover and let rest.
Heat oil to 350°F and fry until golden brown in color.
POTATO INGREDIENTS
Water - 4 Quarts Salt - To Taste Potato - 1 lb (1/2 inch cubes) Oil - 1/8 cup Black Pepper - 1/4 tsp Ground Geera - 3/4 tsp Scotch Bonnet Pepper - To Taste (optional) Oil - For Frying
METHOD
Add water and salt to a deep sauce pot over high heat and bring to a boil.
Add potatoes and let cook until tender.
Once potato is cooked; strain and return to stovetop.
Add oil, ground geera, black pepper and salt to taste.
Set aside.
BEEF INGREDIENTS
Oil - 1/8 cup Ground Beef - 1 lb Onion - 1/2 cup (minced) Garlic - 3 cloves (minced) Chive - 1 bundle FC Chadon Beni - 1 bundle FC Scotch Bonnet Pepper - To Taste Salt - To Taste Black Pepper - 1/4 tsp

METHOD
Heat frying pan over medium heat.
Add oil.
Once oil is hot add beef and let cook, stirring occasionally. (2 minutes)
Add all remaining ingredients.
Allow beef mixture to cook until most of the liquid has evaporated.
Taste for salt and set aside.
TUNA INGREDIENTS
Oil - 1/8 cup Canned Tuna - 8oz Onion - 1/4 cup FC Garlic - 2 cloves minced Lime Juice - 2 tsp Scotch Bonnet Pepper - To Taste Salt - To Taste Black Pepper - 1/4 tsp

METHOD
Heat frying pan over medium heat.
Add oil.
Once oil is heated add onion and garlic and let cook for 2 minutes.
Add all remaining ingredients.
Taste for salt.
Set aside.
