How To Make Trini Shepherd's Pie


Get ready to mash potatoes because this week’s ‘How To?’ episode is all about Shepherd’s Pie:


Yield – 6 to 8 Servings


Ingredients


Mashed potato:

English Potato - 3 lbs

Butter (Salted or Unsalted) - 2-3 tbsp

Cooking Margarine - 2-3 tbsp

Table Cream (or 3 tbsp of Evaporated Milk) - 2-3 tbsp

Salt - to taste

Black Pepper - to taste


Filling:

Minced Beef - 1-2lbs (DO NOT WASH!)

Vegetable Oil - ¼ cup

Diced Spanish Onion - 1 medium

Chopped Garlic - 2-3 tbsp

Chopped Pimentos - 2-3 pimentos

Chopped Chive - 3 tbsp

Chopped Chadon Beni - 2 tbsp

Fine Thyme - 2 tsp (leaves only, no stem)

Tomato Paste - 2 tbsp

Salt - to taste

Black Pepper - to taste


Topping:

Grated New Zealand Cheddar Cheese - ¾ to 1 cup


Method


1. Peel, cut and wash potatoes into 2 inch cubes.

2. Add to a pot of boiling, salted water.

3. Cook until very tender, a fork must go through it easily with no resistance (about 15

minutes).

4. Once cooked, drain potatoes and return to the same pot to help retain temperature.

5. Immediately add all the remaining mashed potato ingredients.

6. Mash and mix thoroughly with a potato masher. Ensure the potato is as smooth as

possible with no lumps. For a smoother mash, add more butter.

7. Set aside.

8. Preheat oven to 350 degrees F.

9. Heat a sauté pan over medium to high heat.

10. Once heated, add vegetable oil.

11. When the oil is hot, add in the beef.

12. Break up the beef and allow to cook until it turns light brown in colour (about 5

minutes).

13. Stir in all other ingredients except for the tomato paste, salt and black pepper.

14. Cook for another 5-7 minutes.

15. Add in tomato paste, salt and black pepper and allow to cook for another 3 minutes.

16. Taste for salt and adjust if needed.

17. After the meat is cooked, immediately grease your baking dish with butter. We used

a 9” by 13” Pyrex Dish.

18. Add half of your mashed potatoes to greased dish and spread evenly throughout.

19. Top with a layer of your meat mixture and cover with mashed potato.

20. Finish with a layer of grated cheese.

21. Place in oven and allow to bake for 35 minutes or until cheese is golden brown.

22. Remove from oven and allow to cool for a minimum of 15 minutes.
