3 Trini Sauce Recipes

*FC - Finely Chopped

 

TAMARIND SAUCE INGREDIENTS 

 

Tamarind Pulp - 8 oz

Water - 2 Cups

Brown Sugar - 3 Tbsp

Garlic - 3 cloves (FC)

Scotch Bonnet Pepper - To Taste (FC)

Chadon Beni - 6 Leaves

Salt - To Taste 

 

METHOD

  1. Separate the tamarind pulp from the seed in 1/2 cup of water.

  2. Add tamarind mixture to a sauce pot over low to medium heat.

  3. Add sugar, garlic, pepper, chadon beni, salt and remaining water.

  4. Bring to a slow boil and let cook for 15 minutes.

  5. Taste for salt and tartness. 

  6. Add more sugar if needed.

GARLIC SAUCE INGREDIENTS 

 

Water - 1/4 Cup

Garlic - 17 Cloves

Chadon Beni - 6 Leaves

Sugar - 1/4 Cup

Mayonnaise - 2 1/2 Cups

 

METHOD

  1. Using a blender on medium speed, add water, garlic, chadon beni and sugar one at a time and blend until smooth.

  2. In a bowl, add garlic mixture to mayonnaise and mix until fully incorporated. 

CHADON BENI SAUCE INGREDIENTS 

 

Water - 2 oz

Garlic - 4 Cloves

Scotch Bonnet Pepper - To Taste

Chadon Beni - 30 Leaves

Salt - 1/8 Tsp

METHOD

  1. Using a blender on medium speed, add water, garlic, pepper, chadon beni and salt one at a time.

  2. Let blend until smooth.
