How To Make Trini Chadon Beni & Garlic Mayonnaise
Chef Jason teaches Kezzianne how to make Chadon Beni & Garlic Mayonnaise… from scratch:
Yield: 10 oz INGREDIENTS
1 Whole Egg 1 Tsp Yellow Mustard 1 Tbsp Lime Juice ½ Tsp Salt ¼ Tsp Black Pepper ¼ Tsp Paprika Powder ½ Cup Vegetable Oil 1 Tbsp of Chadon Beni (Culantro) Leaves, minced finely 2 Cloves Garlic, minced finely
Place KitchenAid blender container vessel on your counter and add in the egg, yellow mustard, lime juice and salt.
Sprinkle in the following seasonings; salt, black pepper and paprika. Cover vessel with rubber guard provided and attach to blender base. Begin to blend for about 15 seconds on level 1.
Remove rubber guard from blender and pour in the oil.
Cover vessel again and begin to blend the oil on level 2 for 20 seconds until emulsification occurs and the liquid turns white in colour as that of mayonnaise.
Open blending vessel, add both the minced chadon beni and garlic and blend for a further 10 seconds until combined.
Serve Garlic Chadon Beni Mayonnaise with fish and fries as a dip or even use mayonnaise as a great spread when making sandwiches.
