Trinbagonian bake is a traditional Caribbean bread known for its rich flavor and soft, slightly dense texture. Made with flour, sugar, baking powder, salt coconut, pumpkin and/or carrots, it's kneaded into a dough, shaped, and baked until golden brown. This local staple is enjoyed with cheese, buljols or by itself.
Yield – One 9” Bake. (DOUBLE RECIPE TO MAKE MINIS)
Ingredients
Cassava & Wheat Flour – 2 ½ cups
Salt – 1 tsp
Baking Powder – 2 tsp
Brown Sugar – 2 tsp
Instant Yeast – 1 ½ tsp
Warm Water – 6 fl. oz.
Unsalted Butter – 3 oz (6 tbsp)
Finely Ground or Grated Coconut – 1/3 cup
Method
In a bowl, combine flour, salt, baking powder, sugar & yeast.
Make a well in the middle and add water.
Knead to a shaggy texture before adding butter & coconut.
Continue to knead for 3 to 5 minutes.
Place dough in a greased bowl, cover and allow to rest for 1 to 2 hours.
Preheat your oven to 350F.
Roll out your dough into a 9-to-10-inch disc.
Place on a greased baking sheet or pizza tray.
Bake for 25 minutes.
Transfer to a wire rack and allow to fully cool before slicing.
