Swiss Roll
Yield – 12 Slices
Ingedients
Egg Whites – 9 oz
Granulated Sugar – 4 oz + 6 oz
Egg Yolks – 6 oz
Vanilla Extract – 1 tsp
Vegetable Oil – 1 tbsp
Salt – Pinch
Cake Flour – 6 oz
Method
1. Whisk egg whites until they form soft peaks.
2. Add 4 oz sugar.
3. Whisk until fully incorporated.
4. Add egg yolks, one at a time.
5. Whisk until fully incorporated.
6. Whisk in vanilla extract.
7. Whisk in oil.
8. Whisk in salt.
9. Fold in sifted flour.
10. Transfer to a parchment lined ½ baking sheet that’s lightly greased.
11. Bake for 7 minutes in your oven that’s set at 425F.
12. Set aside to cool.
Guava Jam
Ingredients
Guava Pulp/Concentrate – 1 lb
Water – 1 cup
Granulated Sugar – 1 cup
Cinnamon Stick – 1
Method
1. Add all your ingredients into a small saucepan, bring to a boil, reduce to a simmer and allow to cook for 20 to 25 minutes or until the mixture has thickened.
2. Set aside to cool.
Assembling The Swiss Roll
1. Sprinkle 6 oz of sugar evenly on your Swiss roll.
2. Place a piece of parchment paper on top followed by a cutting board or baking sheet.
3. Flip it over and peel off the parchment paper.
4. Cut and square off your edges.
5. Spread your guava jam.
6. Gently roll into a log.
7. Place in your chiller to allow it to rest and set and before slicing.
8. Enjoy!
