Trini Pot Bake Recipe (inspired by Uncle Clyde)


Yield: 12 to 16 Servings

INGREDIENTS

Flour - 8 cups Salt - 1 1/2 tsp Baking Powder - 2 1/2 to 3 tbsp Water - 3 cups Prize Bread & Pastry Margarine - 8 oz

METHOD

  1. Add flour, salt and baking powder to a bowl.

  2. Mix together until fully incorporated.

  3. Add water and knead until a dough begins to form.

  4. Just as it begins to form; add prize bread and pastry margarine.

  5. Massage and knead margarine into the dough (about 5 minutes).

  6. Once fully incorporated; sprinkle dough with flour and cover with a damp cloth.

  7. Allow to rest for 30 minutes.

  8. Remove cover and divide dough into 3 or 4 pieces.

  9. Roll into smooth balls.

  10. Coat with vegetable oil, cover with a damp cloth and allow to rest for a minimum of 1 hour.

  11. For optimal results; put coated balls into a sealed container, place into the refrigerator and allow to rest for 24 hours.

  12. Heat Tawa or Iron Pot over medium to high heat.

  13. Once heated, take a ball, turn it over, make a well in the center and fill with vegetable oil.

  14. Immediately place on hot Tawa (oil filled side down) ensuring to evenly spread the oil.

  15. Once on Tawa, begin to press and spread the dough into a circle about 3/4 inches thick.

  16. Allow to brown before turning over.

  17. Remove from Tawa once both sides are browned.

  18. Allow to rest for 15 minutes before consuming.

  19. Enjoy!
