How To Make Homemade Pizza (Trini Style) 🇹🇹 Foodie Nation

This week, Tiff and Khary are getting creative in the kitchen with homemade pizza from scratch! Tiff keeps it classic with beloved Trini-style toppings, while Khary takes things up a notch with some unexpected (but delicious) twists.

RECIPE
Pizza Dough
Ingredients
2 cups lukewarm water
1 pinch sugar
1½ tablespoons active dry yeast
2 tablespoons olive oil
5¼ cups all purpose flour or bread flour
1½ teaspoons salt
Method
1. In the bowl of your stand up mixer (or a large bowl if you knead by hand) add the warm water and sugar, sprinkle the yeast on top, let sit for 5-10 minutes, then stir to combine. Continue with Machine or Hand.
2. Add the olive oil, flour and salt, then with a fork mix until the dough starts to come together. On a lightly floured surface remove dough from the bowl and knead until dough is smooth and elastic approximately 10 minutes (if dough is really sticky add a little extra flour).
3. Place in a lightly oiled bowl, roll the dough to cover lightly with the oil, cover the bowl with plastic wrap and a large clean kitchen towel, leave in a warm draft free area until doubled in bulk, approximately 2 hours.**
4. Pre heat oven to 450° (250° celsius). Punch dough down a few times and divide into 1-3 balls, let dough rest for 20 minutes.
5. Stretch/Roll Dough to 12” diameter.
6. Top with your favourite toppings, bake for approximately 15-20 minutes until crust is golden and cheese has melted. Enjoy!
Fresh Pizza Sauce
Quantity Unit Ingredient
1.5 lb Tomatoes
2 bunch Fresh basil [substitute for dried basil in final recipe]
1 bunch Fresh Oregano [substitute for dried oregano in final recipe]
1 bunch Fresh Parsley
4 stalks Fine Thyme
12 cloves Garlic (grated)
0.5 cup Olive Oil
1 bottle Tomato Paste
TT Salt
1 cup Water
Method
1. Add all ingredients to food processor except water, olive oil and salt. Pulse food processor until all ingredients are combined but still coarse.
2. Adjust consistency with water as needed and pulse with food processor.
3. Add sauce to a sauce pot and bring to a simmer.
4. Simmer for 25 mins.
5. Finish with olive oil and season with salt to taste.
Fresh Chorizo (Mexican Style)
2 pounds finely ground pork
4 tablespoons chili powder (ground dried chilli pepper)
2 tablespoons paprika
2 tablespoons smoked paprika
2 teaspoons dried oregano
1 pinch ground cinnamon
1 pinch ground cloves
1 tablespoon ground cumin
1 teaspoon salt
2 cloves garlic, crushed
1/2 cup white vinegar
Method
1. Add all ingredients to a mixing bowl and combine well using hands.
2. Adjust seasoning with salt to your liking.
3. Let marinate for at least 30 minutes before use.
Caramelised Onions
Ingredients:
2 large onions (cooking onions/white onions)
2 tablespoons oil (vegetable, olive, or canola)
½ teaspoon salt
Method:
1. Peel the onions.
2. Slice them in half, then into thin slices (about ⅛ inch thick).
3. Place a wide frying pan over medium heat.
4. Add the oil and let it warm up.
5. Add the onions to the pan and sprinkle in the salt.
6. Stir to coat the onions in oil, then reduce the heat to low.
7. Stir every few minutes.
8. Cook low and slow.
9. After 40–45 minutes, the onions should be soft and golden brown.
10. If the pan dries out, you can add a tablespoon of water to prevent sticking.
11. Taste and adjust salt if needed.
