Brunswick Mackerel and Sweet Potato Patties


Canned Brunswick Mackerel in natural oil - 510g (drained and flaked)

Sweet Potatoes - 3 cups (peeled and grated)

Chive - 1/4 cup (finely chopped)

Parsley - 1/4 cup (finely chopped)

Whole Wheat Flour - 1/8 cup

Egg - 1 Large (beaten)

Spicy Brown Mustard - 1 tbsp

Lemon Juice - 2 tbsp

Paprika - 1/2 tsp Salt - 1/2 tsp or to taste

Black Pepper - 1/8 tsp or to taste


1.In a large mixing bowl, combine the mackerel, sweet potatoes, chive, parsley, flour, egg, mustard, lemon juice, paprika, salt, and pepper. Mix until well combined.

2.Form the mixture into patties of desired size, depending on preference.

3.Heat a large nonstick skillet over medium heat. 4. Cook the patties for about 4-5 minutes per side, or until golden brown and cooked through.

5.Serve the mackerel patties hot, garnished with additional parsley if desired.
