Ingredients
Turkey Patties:
1 lb minced turkey
1 egg yolk
½ cup panko
1 onion, blended or grated
1 garlic clove, minced
1 scotch bonnet or chili, finely chopped
1 tbsp fresh sage, chopped
1 tbsp fresh thyme, chopped
Salt & black pepper to taste
Cranberry & Sorrel Chutney:
1/4 cup dried sorrel
1 tin whole cranberry sauce
Juice & zest of 1 orange
1 cinnamon stick
2–3 cloves
To Build:
1 wheel brie, sliced
12 dinner rolls
3 tbsp softened butter
1 garlic clove, grated
Method
Make the Patties: Combine minced turkey, panko, egg yolk, grated onion, garlic, scotch bonnet, sage, thyme, salt and pepper. Form into 12 mini patties.
Make the Chutney: In a saucepan, combine dried sorrel, cranberry sauce, orange juice/zest, cinnamon stick and cloves. Simmer until thickened. Remove cinnamon & cloves before serving.
Sear: Heat a pan over medium-high heat and sear patties until golden and cooked through.
Garlic Butter: Mix softened butter with grated garlic. Spread on sliced dinner rolls.
Assemble: Top rolls with brie and broil 2–3 minutes until melted and golden. Add patties and spoon chutney on top.
Secure with a pick & serve warm.
