Eddoes & Lentil Peas Recipe by Summer Telfer | Baby Foodie


Cook time – 45 mins

Prep time – 5 mins

Age – 8 months+

Yield – 3 servings


Ingredients:


½ Cup Eddoe

1/8 Cup Dried Lentil Peas

3 Cups Water

¼ Cup Diced Tomatoes

1 tbsp Diced Garlic

1 tsp Thyme

¼ tsp Other preferred seasonings


Instructions:


1. Run lentil peas under water in a strainer and properly rinse. Peel eddoes and cut into small cubes.

2. In two separate small pots bring 1 ½ cup of water to a boil. Place eddoes pieces in one pot and dried lentil peas in the next.

3. In the pot with the lentil peas, add in garlic, diced tomatoes and seasonings of choice. Stir and cover to allow the lentils to cook till tender about 30-35 minutes. Keep stirring occasionally.

4. Cook the eddoes pieces until easily pierced by a fork about 10-12 minutes. When fully cooked, drain and set aside.

5. Once lentils are tender, remove from heat and allow to cool,

6. Cut eddoes again into smaller pieces and leave some bite sized. Toss the eddoes pieces in the lentil peas and serve to baby whole, while feeding the lentil peas from a spoon.

7. Store in an airtight container and place in fridge for up to 3 days.

Eddoes: Excellent source of fiber and carbs. It also contains potassium, magnesium, iron, zinc and other minerals that support the overall health of your baby.


Lentil Peas: Considered a powerhouse food for babies, they are packed with fiber, great source of protein and lots of Vitamins and Minerals such as Vitamins A, C, K, iron and zinc, B-Vitamins especially B6 and folate.
