Yield - 4 to 6 Servings.
Ingredients:
Duck - 2 lbs (washed and cleaned)
Garlic- 1/4 cup (finely chopped)
Onion- 1 cup (finely chopped)
Fine Thyme - 5 sprigs
Spanish Thyme - 3 leaves (finely chopped)
Ginger - 2 tbsp (finely chopped)
Pimento Sauce - 1/3 cup
Pepper Sauce - 1 tbsp or to taste
Salt - 2 tbsp or to taste
Black Pepper - 1 tsp
Curry Powder - 2 tbsp
Geera Powder - 1/2 tbsp
Garam Masala - 1 tsp
Coconut Oil - 1/8 cup
Brown Sugar- 1/3 cup
Roucou - 3 tbsp
Methi Seeds - 2 tbsp
Scotch Bonnet Pepper- 1 whole
Parboiled Rice- 1 lb
Pigeon Peas- 2 tins (410g)
Carrots- 2 cups (cubed)
Pumpkin- 1 cup (cubed)
Chive- 1/2 cup (finely chopped)
Chadon Beni-1 cup (finely chopped)
Fresh Coconut Milk- 1 cup
Water - 1 to 3 cups
Method:
1. Wash Duck in flour and water
2. Rinse
3. Add lime juice
4. Rinse and squeeze out excess liquid
5. Set aside
6. Make green seasoning
7. Season duck with green seasoning + powdered seasonings
8. Set aside
9. Heat pot
10. Add oil and brown sugar
11. Caremalize sugar
12. Add duck
13. Allow duck to develop colour - 5 mins per side
14. Add roucou + methi + whole pepper - 5 mins
15. Allow Duck to cook - 30 mins - ADD ENOUGH WATER TO HELP
COOK
16. ONCE DUCK IS 80% WAY COOKED - Add rice and peas - 5 mins
17. Add remaining ingredients
18. Allow rice to cook all the way through
19. Taste for SALT
