Guava Pineapple Oven BBQ Pork Ribs Recipe by Chef Shaun 🇹🇹


Shaun pulls out all the stops with this Guava and Pineapple Oven-Barbecued Pork Ribs Recipe using a range of Goya All Purpose Seasonings:


Yield - 1 Rack of Ribs


Ingredients

Baby Back Pork Ribs - 1 Rack

Mustard oil - 1/8 cup to ¼ cup

Sea Salt - 1 tbsp or to taste

Goya All Purpose Seasoning - 1 tsp

Goya Seasoning with Cumin - 1 tsp

Goya Seasoning with Pepper - 1 tsp

Cinnamon Powder - 1 tbsp

Brown Sugar - ¼ cup


Method

1. Season ribs and let marinate for 2 hours or overnight for best results.


BBQ Sauce Ingredients

Vegetable Oil - 1/8 cup

Guava Jam - 4 oz

Pineapple - 8oz (crushed)

Water - 2 cups

Brown sugar - ½ cups

Granulated sugar - 1/8 cup

Ketchup - 1 litre

Goya Sea Salt - 1 tsp

Goya All Purpose Seasoning - ¾ tsp

Goya Seasoning with Cumin - ¾ tsp

Goya Seasoning with Pepper - ¾ tsp

Butter - 4 oz

Chive - 1/8 cup (finely chopped)

Chadon Beni - ¼ cup (finely chopped)


Method

1. Heat your medium sized sauce pot over medium heat.

2. Add oil.

3. Once hot, add guava & pineapple.

4. Once bubbling, add water & sugars.

5. Stir until sugar is dissolved.

6. Cover and allow mixture to come to a boil.

7. Once boiling, add ketchup, salt, and seasonings.

8. Bring mixture to a simmer, reduce heat to low and allow to cook for 15 minutes, stirring throughout.

9. Add remaining ingredients, stirring continuously until butter is melted.

10. Remove from heat.


Baking Method

1. Wrap and seal Ribs in parchment paper and foil as illustrated in the video.

2. Bake at 350F for 1 hour.

3. Open boil and ladle sauce over ribs, seal and return to oven for 30 minutes.

4. Open foil and return to oven for an additional 30 minutes to allow the sauce to caramelise and ribs to get some additional colour.

5. Remove from oven and allow to cool for 30 minutes before slicing.
