Why Sardines?
Brunswick sardines bring the goods—calcium, B12, and omega-3s for bone strength, brain function, and all-around endurance.
Ingredients:
1 can Brunswick sardines in olive oil, drained
1 medium sweet potato, roasted and cubed
1 cup mixed greens (spinach, kale, or arugula)
1 boiled egg (optional)
1 tbsp pumpkin seeds
Homemade Dressing:
1 tbsp olive oil
1 tbsp lemon juice
¼ tsp paprika
Salt & pepper to taste
Instructions:
In a bowl, layer greens, sweet potato, sardines, and egg.
Drizzle with homemade lemon-olive oil dressing.
Top with pumpkin seeds.
Season to taste
