Yield – 6 to 8 Servings.
Ingredients
Boneless Chicken Breasts – 2 lbs (1/2-inch pieces)
Pineapple Juice – 1 tbsp + ½ cup
Soy Sauce – 2 tbsp
Hoisin Sauce – 1 tbsp
Cornstarch – 1 tbsp
Water – ¼ cup
Honey – 1 tbsp
Xaoxing Wine – 1 tbsp
Sesame oil – 2 tbsp
Bell Peppers – 1 ½ cups
Onion – 1 cup (sliced)
Garlic – 2 tbsp (minced)
Ginger – 2 tbsp (minced)
Pineapple Chunks – 1 ½ cups
Method
1. In a bowl, combine the soy sauce, hoisin sauce, and a tablespoon of pineapple juice. Add the chicken pieces and let them marinate for at least 15 minutes.
2. In a small bowl, mix the cornstarch with water to create a slurry. Then, mix in the honey or brown sugar, rice vinegar, and the remaining pineapple juice. Set aside.
3. Heat your sesame oil in a large pan or wok over medium-high heat. Add the marinated chicken pieces and cook until they are browned on all sides and cooked through. Remove the chicken from the pan and set aside.
4. In the same pan, add the remaining tablespoon of oil. Add the sliced bell pepper, onion, and minced garlic. Stir-fry for about 3-4 minutes until the vegetables start to soften.
5. Add the cooked chicken back into the pan along with the pineapple chunks. Pour the prepared sauce over the mixture. Stir everything together and cook for another 2-3 minutes until the sauce thickens and coats the chicken and vegetables.
6. Serve hot over steamed rice.
