Vegan Lentil Loaf Recipe by Chef Shaun 🇹🇹 Foodie Nation

A lentil and pea loaf is a vegetarian or vegan dish that serves as an alternative to traditional meatloaf. It typically consists of cooked lentils and peas, along with other ingredients such as vegetables, grains, herbs, and spices, all mixed together and baked into a loaf shape.


Brown Sugar – ¼ cup.

Dried Lentil Peas - 8 oz

Roucou - 1 tbsp (Optional)

Fine Thyme - 5 sprigs

Bayleaf - 1

Scotch Bonnet Pepper - 1 tsp or to taste (finely chopped)

Onion - 1 cup (finely chopped)

Thyme to Lime – ¼ tsp.

Dried Culantro – ½ tsp.

Pimento - 1 tsp (dried) OR 1/2 cup (finely chopped)

Garlic – ¼ cup (finely chopped).

Tomato Paste – ½ cup.

Water - 5 cups.

Black Pepper – ¼ tsp.

Salt - 2 tsp.

Chive – ½ cup.

Rolled Oats – 1 ½ cups.


1. Brown sugar.

2. Add peas, cover and let braise for 5 minutes over medium heat.

3. Add roucou, fine thyme, bayleaf, scotch bonnet pepper, onion, thyme to lime, cilantro, pimento, garlic & tomato paste.

4. Cover and let cook for 5 mins over medium heat.

5. Add water.

6. Reduce heat to low to medium, partly cover and allow to cook for 20 minutes.

7. Season with salt and black pepper.

8. Remove from heat and add chive.

9. Stir to combine before adding oats.

10. Transfer to greased baking loaf pan 8” X 4”.

11. Bake for 30 minutes at 350F.

12. Allow to cool and remove from pan when loaf begins to pull away from sides.
