YIELD - 24 Drops
Anchor Butter - 8 oz
Granulated Sugar - 1 cup
Brown Sugar - 1 cup
Mixed Essence - 1 1/2 tsp
Flour - 1 3/4 lbs
Cinnamon Powder - 1 1/2 tsp
Nutmeg Powder - 1/4 tsp
Mixed Glazed Fruit - 1/2 cup
Raisins - 1/2 cup
Coconut - 2 lbs
Preheat oven to 350°F.
In a bowl, cream butter and both sugars.
Add vanilla and set aside.
In another bowl, mix together flour, cinnamon, nutmeg, mixed fruit, raisins and coconut.
Add dry ingredients to wet in quarters.
Mixture will be firm so don’t panic.
Place half of the dough mixture onto your work surface and roll into a 1 1/2 inch thick log.
Once rolled out, break 1 to 1 1/2 inch thick pieces of dough off of log and place onto a greased baking dish.
Another option would be to "drop" spoonfuls of dough onto a greased baking dish.
Bake for 30 minutes.
