Trinbagonian Green Fig (Banana) Pie Recipe

Yield: 6 to 8 Servings




Green Fig (Banana) - 5 lbs (unpeeled)
Butter - 4 oz
Cooking Butter - 2 oz
Salt - 1/2 tsp
Black Pepper - 1/4 tsp
Evaporated Milk - 1/4 cup
Pimento Pepper - 1/8 cup (finely chopped)
Onion - 1/8 cup (finely chopped)
New Zealand Cheddar Cheese - 1 1/2 cups (grated)




  1. Preheat oven to 375°F.

  2. Clean and peel green bananas.

  3. Place in boiling water and allow to cook until tender.

  4. You can also choose to leave the skin on and place in boiling water. Once tender, drain and remove skin.

  5. Return cooked green bananas to hot pot.

  6. Add butter, cooking butter, salt, pepper, evaporated milk, pimento and onion.

  7. Mash until bananas are evenly mashed and all ingredients are fully incorporated.

  8. Pour into greased baking dish.

  9. Top with grated cheese.

  10. Bake until cheese is golden brown (about 40 minutes).

  11. Let cool before slicing, and Enjoy!
