Tobago Coconut "Crack Back" Biscuits Recipe
Yield: 36 Cookies
INGREDIENTS
Granulated Sugar - 1 1/2 cups
Butter - 4 oz (room temperature)
Egg - 1
Milk - 1/8 cup
Mixed Essence - 1/4 tsp
Flour - 4 cups
Baking Powder - 1 tsp
Grated Coconut - 3 cups
METHOD
Preheat oven to 350°F.
Mix egg, milk and essence. Set aside.
Mix flour and baking powder. Set aside.
Using a cake mixer or spatula, cream the sugar and butter.
Add egg, milk and mixed essence mixture.
Mix until fully incorporated.
Add flour and baking powder; 1/2 at a time.
Mix until fully incorporated.
Using a spatula, mix in grated coconut.
Once fully incorporated, spoon the dough into a greased baking sheet as illustrated in the video.
Bake until golden brown (about 30 minutes).
Remove from baking sheet and allow to cool.
