Trini Curry Bodi Recipe


Yield: 4 - 6 Servings

INGREDIENTS

Bodi - 1 lb (2” pieces) Curry Powder - 1 tbsp Water - 1/4 cup Oil - 1/8 cup Caripulee Leaves - 2 Geera/Cumin Seeds - 1/4 tsp Diced Onion - 1/4 cup Garlic - 1 tbsp (finely chopped) Scotch Bonnet Pepper - to taste (finely chopped) Salt - to taste Black Pepper - to taste

METHOD

  1. Wash and remove ends from the Bodi.

  2. Slice into 2” pieces.

  3. Set aside.

  4. Mix curry powder and water into a paste.

  5. Set aside.

  6. Heat pot over medium to high heat.

  7. Add oil.

  8. Once heated, add caripulee leaves and cumin seeds.

  9. Allow to fry until they begin to burn.

  10. Add onion, garlic and hot pepper.

  11. Allow to cook until translucent and slightly burnt.

  12. Stir in curry paste.

  13. Allow to cook until mixture dries down completely.

  14. Add Bodi and mix, coating the Bodi with the curry mixture.

  15. Reduce heat to low to medium, cover and allow to cook until Bodi is tender (about 15 minutes).

  16. Season with salt and black pepper.

  17. Enjoy!
