An entirely semi-homemade meal for a no-pressure lunch that both kiddos and moms will love! Chef Ari shows how to put together a quick and tasty back-to-school lunch kit with simple tips and tricks for busy parents.
On the menu:
-Asian Chicken Slaw Wraps
-Mini Korean Potato Dogs
-Fresh-Made Juice
Asian Chicken Slaw Wraps Recipe
1 pack of soft tortillas
½ rotisserie chicken
1 coleslaw pack
½ tin mandarin
2 tbsps slivered almonds
2 tbsps chives
1tbsp ginger garlic paste
¼ cup mayo
3tbsps toasted sesame seeds
Dash sesame oil
1tbsp dried cranberries/cranberry sauce
Method:
Shred chicken in a large bowl. Add mandarin,coleslaw pack,chives and almonds.In a separate bowl make dressing with the last five ingredients and pour over the chicken mixture. Put generous scoop of mixture into tortilla and roll up. Cut in half and pack.
Mini Korean Potato Dogs Recipe
1 pack sausages of choice
2 cups cubed frozen fries
1 cup panko
1 cup pancake mix
¼ cup cornmeal
1 egg
½ cup milk
Oil for frying
¼ cup of water as may be needed
Method:Cut sausages into 2 and set aside.Cut handful of fries into cubes. Make batter out of pancake mix, cornmeal, egg and milk into a thin pancake style consistency. In a bowl mix fry cubes and panko.Pour batter into a cup . Dip sausages into batter and roll into fry cubes and panko. Fry until golden.
Fresh-Made Juice Recipe
½ pineapple
2 apples
12 oz lime juice
Sprig mint*optional
Method: Blend fruit and pass through sieve and pour into a jug or carafe. Add pre-made lime juice and chopped mint to glass. Enjoy on ice.
