Chef Ari showing you how to pull off an easy, flavour-packed 30-minute taco night that the whole family will love! Perfect for mums looking for quick weekday dinner ideas that still feel special.


RECIPES

Fish tempura

1 cup pholourie mix

1 egg white

3tbsps soda water

½ lb fish fillets

Oil for frying


Method:

Cut fish fillets into strips. Make a batter with the first three ingredients. Dip strips in batter and fry.


Corn relish

1 tin drained corn

½ chilli sliced* optional

2 tbsps diced purple onion

2 tbsps diced sweet pepper

½ tsp cumin

¼ cup mayo

2 tbsps chilled creamcheese

1tbsp tex mex


Method: Mix all ingredients in a bowl and chill


Mexican rice

1 jar salsa

1tsp cumin ground

2tbsps paprika

1 cup rice

1 bayleaf

1 tastemaker cube

Tops of an onion

Water or chicken stock for boiling


Method: saute cumin until fragrant. Add salsa,paprika,bayleaf,tastemaker,onion tops and rice. Add water or chicken stock and boil.


Blackbeans

1 Sweet pepper

1 garlic cloves

1 tin blackbeans

½ tsp cumin

½ tsp sugar


Method:

In a saucepot simmer all the above until thickened.
