Brunswick Mackerel Savory Rice Cakes with Pico de Gallo

Why Mackerel?


Brunswick mackerel is rich in omega-3s and protein—perfect for reducing inflammation, improving endurance, and giving your body clean energy without the sugar crash.


Ingredients:


1 can Brunswick mackerel in oil, drained and flaked

3–4 plain or brown rice cakes

4 tbsp Greek yogurt or labneh

2 tsp Dijon mustard or fresh lemon juice

1 tbsp chopped fresh dill or parsley

Salt to taste

Freshly ground black pepper

2–3 tbsp fresh pico de gallo


Quick Pico de Gallo:


2 small tomatoes, diced

1 tbsp red onion, finely chopped

1 tbsp cilantro, chopped

½ tsp lime juice

Pinch of salt


Instructions:


Mix mackerel with yogurt, Dijon, dill, salt, and pepper.

Spread onto rice cakes.

Top with pico de gallo.
