Brunswick Sardine and Chickpea Salad Recipe
Ingredients
Brunswick Sardines in Olive Oil - 6 oz (drained)
Canned Chickpeas - 15 oz (rinsed and drained)
Cherry Tomatoes - 1/2 cup (halved)
Red Onion - 1/4 cup (finely chopped)
Cucumber - 1/4 cup (diced)
Fresh Parsley - 2 tbsp (chopped)
Lemon Juice - 1 tbsp
Olive Oil - 2 tbsp
Salt and pepper to taste
Method
1. In a large bowl, combine the drained canned sardines and chickpeas.
2. Add cherry tomatoes, red onion, cucumber, and chopped parsley to the bowl.
3. Squeeze the lemon juice over the mixture and drizzle with extra virgin olive oil.
4. Season with salt and pepper to taste.
5. Gently toss all the ingredients together until well combined.
