Comforting Gingerbread Cupcakes Recipe by Chef Shaun 🇹🇹 Foodie Nation


Yield - 12 cupcakes


Cupcake Ingredients

Unsalted butter - 1/2 cup (room temp)

Brown Sugar - 1/2 cup

Large Egg - 1

Molasses - 1/8 cup

Grated Ginger - 3 tbsp (packed)

Cinnamon Powder- 1 tsp

Grated Nutmeg - 1/2 tsp

Baking Powder - 1/2 tsp

Baking Soda - 1/2 tsp

Salt - 1/2 tsp

Buttermilk - 2/3 cup

All-purpose Flour - 1 1/3 cup


Frosting Ingredients

Unsalted Butter - 1/2 cup (room temp)

Cream Cheese - 1/2 cup

Lemon Juice - 1 tbsp

Vanilla Extract - 1/2 tsp

Icing Sugar - 2 cups


Method

1. Preheat your oven to 350F.

2. Cream butter and sugar.

3. Gradually whisk in eggs & molasses.

4. Gradually whisk in ginger, cinnamon, nutmeg, baking powder, baking soda & salt.

5. Add buttermilk & flour alternately until all are fully incorporated into your cupcake batter.

6. Transfer to your lined cupcake pan.

7. Bake for 18 minutes.

8. Allow to cool completely.

9. For your frosting, cream your butter and cream cheese until light and fluffy.

10. Whisk in lemon juice, vanilla and gradually add your icing sugar.

11. Continue to whisk until evenly incorporated.

12. Ice your cupcakes and enjoy!
