Jalebi is a popular sweet treat originating from the Indian subcontinent. The batter is made from a mixture of flour, yogurt, and water, which is fermented overnight to create a slightly sour flavor. Piped into hot oil in a circular shape, it's fried until crispy. Once fried, jalebi is soaked in a sugar syrup which is sometimes flavored with spices and aromatic ingredients. Its distinctive spiral shape and bright color make it visually appealing.
Jalebi has a crispy exterior and a soft, syrup-soaked interior, offering a delightful texture and flavor combination. It's typically served as a dessert or snack, often paired with other Indian sweets. With cultural significance in Indian festivals and celebrations, jalebi is cherished as a beloved dessert.
Yield – 16 to 24 Servings.
Ingredients
Water – 2/3 cup + 1 cup.
Plain Yogurt – ½ cup.
Orange Food Colouring - 2 tsp
Cornstarch – ½ cup
Baking Soda – ½ tsp
All Purpose Flour – 2 cup
White Sugar – 2 cup
Cardamom Pods – 6 (crushed)
Vegetable Oil – 2 cups
Chopped Pistachios – ½ cup (Garnish)
Method
* Add 1/3 cup of water, yogurt, food colouring, cornstarch, baking soda & flour to your bowl.
* Mix until all your ingredients are fully incorporated.
* Cover and allow your batter to ferment at room temperature for 6 to 8 hours or overnight.
* Add ½ cup water, sugar & cardamom to a small saucepan over medium heat.
* Stir until sugar has dissolved.
* Allow to simmer for 2 to 3 minutes before removing from heat, covering and setting aside.
* Preheat your oil to 350F.
* Transfer your batter to a container with a spout.
* Pour into oil as illustrated in the video and fry to a golden orange crisp.
* Immediately transfer to your warm simple syrup.
* Allow to sit in syrup until fully soaked.
* Garnish with pistachios and enjoy!
