🇹🇹 Geera Pork Recipe by Chef Jeremy Lovell


Yield: 6 to 8 Servings.

Cook Time: Approx. 90 minutes

Seasoning of Pork: 30 minutes

Marinating Time: 2hrs or overnight


Ingredients:

ï‚· Pork Shoulder or Rump (cleaned and cut up into 2inch pieces) - 3lbs


Washing of Pork:

 Lime Juice – 4 tbsp

 Water – 6 cups


Seasoning Mix:

ï‚· Pimento Peppers - 3 tbsp (finely chopped)

ï‚· Garlic - 3 tbsp (finely chopped)

ï‚· Chadon Beni - 3 tbsp (finely chopped)

ï‚· Onion - 3 tbsp (finely chopped)

 Whole Hot Pepper – 1

 Mustard Oil - 2 tbsp (substitute – vegetable oil)

ï‚· Fine Thyme - 2 tbsp (finely chopped)

ï‚· Curry Powder - 1 tbsp

ï‚· Ground Geera/Cumin - 3 tbsp

ï‚· Chive - 3 tbsp

ï‚· Black Pepper - 1 tbsp

 Salt – to taste


Ingredients to Chunkay/Sauté:

 Mustard Oil - 3 tbsp (substitute – vegetable oil)

 Garlic – 4 whole cloves

ï‚· Onion - 3 tbsp (finely chopped)

ï‚· Pimento Pepper -3 tbsp (finely chopped)

ï‚· Whole Geera/Cumin Seeds - 3 tbsp

ï‚· Water- 3 tbsp + 1 cup


Method:


Washing of Pork:

ï‚· Using a large bowl, add pork, lime juice and water. Let soak for 15mins then rinse thoroughly in bowl under running water.

ï‚· Strain out all water.


Seasoning of Pork:

ï‚· Add all ingredients listed in the seasoning mix to washed pork and mix for 5mins.

ï‚· Cover and allow pork to marinate over night or for at least 2 hours.


Chunkay/Sauté:

ï‚· Using a medium sized bowl, add all ingredients except oil and mix.

ï‚· Place heavy metal pot or skillet on stove.

ï‚· Add oil and allow to heat up.

ï‚· When pot and oil is very hot, add Chunkay ingredients and stir, allowing to cook for 5mins.


Cooking of Pork:

ï‚· Add seasoned pork to chunkayed ingredients, stir thoroughly and cover.

ï‚· Let pork cook for 30 minutes then check for liquid levels, allow pork to spring its own liquid before adding water.

 If water is needed add ½ cup at a time.

ï‚· Cook for a further 30 minutes.

ï‚· Check pork for doneness and liquid levels for desired amount.


NOTE:

Chunkay Meaning:

The process of sautéing by added ingredients such as garlic, onions, pimento and other spices to very hot oil to enhance their flavors.
