PLANTAIN SALSA RECIPE
1 med plantain (ripe)
1 med onion
3 cloves garlic
2 tbsp fermented pimiento sauce (recipe on Foodie Nation)
1 tsp fermented pepper sauce (recipe on Foodie Nation)
1 tbsp chadon beni
1 lime
0.25 cup vegetable/coconut oil (for frying)
Salt to taste
Method
1. Peel plantain and slice lengthways. Shallow fry in a skillet. Reserve and allow to cool completely.
2. Cut plantain and onions into small dice.
3. Finely chop garlic.
4. Shred/chiffonade chadon beni
5. Combine these into a mixing bowl, add pimiento sauce and pepper sauce and dress with the juice of one lime.
