How To Make Tomato Choka


Kez looks on with excitement as Chef Jeremy demonstrates how he prepares his spin of Tomato Choka:


Yield - Serves 3 persons

Cook time – 15 minutes

Prep time – 15 minutes


Ingredients


 Tomato - 1lb

 Onion – 2 tbsp

 Pimento Pepper – 4 peppers

 Garlic – 3 cloves (Crushed)

 Mustard Oil – 2 tbsp (substitute vegetable oil)

 Chadon Beni - 2 tbsp (finely chopped)

 Salt to taste

 Black Pepper - 1 tsp

 Brown Sugar - 1 tbsp

 Curry Powder - 1 tsp

 Mustard – 1 tsp

 Hot Pepper – 1


Method


 Over an open flame, roast whole tomatoes, onion and pimentos until outsides are charred. Cut into half inch pieces and set aside.

 Place sauté pan on stove and allow to heat up

 When sauté pan is hot, add mustard oil, garlic and curry powder.

 Stir for 5 minutes then add tomatoes, onion and pimentos.

 Add black pepper, mustard, sugar, chadon beni and salt to taste and stir for 5 minutes.

 Allow to cook for 15 minutes.

 Take off heat.


Note: This dish is typically served with Sada roti or coconut bake.
