Lion Brand Doubles Recipe

Bara Ingredients


Lion Brand Roti & Doubles Flour - 3 cups (sifted)

Brown Sugar - 1 tsp

Salt - 1/2 tsp

Tumeric Powder - 3/4 tsp

Instant Yeast - 1 tsp

Lion Brand Baking Powder - 1 tsp

Luke Warm Water - 1 cups + 3 tbsp (measure this in ounces)

Vegetable Oil - 1 tbsp + 4 cups (for frying)


Method


1. In a bowl, flour, sugar, salt, tumeric, yeast & baking powder.

2. Mix together until all the ingredients are fully & evenly incorporated into the flour.

3. Make a well in the middle and add 1/3 to half of the water.

4. Using your fingers, mix in the water until a dough begins to form.

5. Set dough to one side of the bowl and add water to combine remaining dry ingredients.

6. Do this until all the dry ingredients has combined.

7. Once all combined, continue to knead into one dough ball, as illustrated in the video.

8. You wanna mix this for 2-3 minutes ensuring not to over ix the dough which will cause the Bara to be tough at the end.

9. Drizzle tbsp of oil over the dough and massage onto dough.

10. Cover and let rest for 30 minutes to 1 hour.

11. ⁠23. Once rested, liberally oil your hands and break golf size balls of dough into your them.

12. Lightly grease your counter top to ensure the dough doesn’t stick to it.

13. Using both hands, spread the ball into a thin Bara, as illustrated in the video, ensuring to thin out the edges

14. Preheat your oil for frying to 390-395F.

15. Once brought up to temperature, place your Bara in the oil and fry for 2-3 seconds on either side.

16. Remove from oil and place on paper towel to allow excess oil to drain off.
