Trini BBQ Sauce Recipe by Chef Jeremy Lovell


Yield - 6 Cups.

Prep Time – 45 minutes.


Ingredients:

 Chadon Beni – 3 tbsp (finely chopped)

 Pimento Peppers – 3 tbsp (finely chopped)

 Salt to taste

 Sugar – 2tbsp

 Black Pepper -1 tbsp

 Garlic – 1 cup (finely chopped)

 Red Onion – 1 cup (thinly sliced)

 Chive– 3 tbsp (finely chopped)

 Water – Approx. 1 cup

 White Vinegar – 1 tbsp

 BBQ Sauce – 4 cups

 Coca Cola – 20oz

 Bay Leaf – 2 each

 Mustard – 4 tbsp

 Cinnamon Stick – 1

 Star Anise – 2

 Clove Powder – 1 tsp


Method:

 Place sauce pot on stove over low heat.

 Add all ingredients.

 Stir until fully incorporated

 Allow to simmer for 45 minutes, ensuring to stir occasionally.
