Trini-Chinese Fried Chicken Recipe by Chef Jeremy Lovell


Yield: 6 Servings

Cook Time: Approx. 1hr

Seasoning of Chicken: 30mins

Marinating time: 3hrs


Ingredients:


 Whole Chicken (halved, cleaned and gutted) - 4lb


Washing of Chicken

 Lime Juice – 4tbsp

 Water - 6 cups


Seasoning Mix

 All Spice - 2 tbsp

 Vetsin – 2 tbsp (This is optional)

 Black Pepper - 1 tbsp

 Onion Powder - 2 tbsp

 Garlic Powder - 2 tbsp

 Sesame Oil – 2 tbsp

 Dark Soy – 2 tbsp

 Salt to taste.


Frying of Chicken.

 Vegetable Oil – Just enough to cover the entire chicken while frying. (Be sure to use the right size Pot – general rule of thumb is for the oil to fill no more than 1/3 of the Pot to avoid spillage).


Method:


Washing of Chicken

 In a large bowl, place whole chicken, lime juice and six (6) cups of water.

 Allow to soak for 5mins.

 Rinse chicken under running water.

 Drain off excess water.


Seasoning of Chicken

 In a large bowl, place chicken and massage seasoning mix onto chicken.

 Cover and allow to marinate for at least 3hours.


Cooking of Chicken.

 Pre heat oven to 375 degrees F.

 Pre heat oil in pot to 350 degrees F.

 Once oil is hot, add seasoned chicken.

 Allow to fry until chicken is golden brown.

 When chicken is golden brown, remove from oil, place on baking tray and into oven.

 Let cook in oven for 40mins.

 Using a food thermometer, check internal temperature of chicken. (Internal temperature should be over 165℉)
