Trini-Chinese Fried Chicken Recipe by Chef Jeremy Lovell
Yield: 6 Servings
Cook Time: Approx. 1hr
Seasoning of Chicken: 30mins
Marinating time: 3hrs
Ingredients:
Whole Chicken (halved, cleaned and gutted) - 4lb
Washing of Chicken
Lime Juice – 4tbsp
Water - 6 cups
Seasoning Mix
All Spice - 2 tbsp
Vetsin – 2 tbsp (This is optional)
Black Pepper - 1 tbsp
Onion Powder - 2 tbsp
Garlic Powder - 2 tbsp
Sesame Oil – 2 tbsp
Dark Soy – 2 tbsp
Salt to taste.
Frying of Chicken.
Vegetable Oil – Just enough to cover the entire chicken while frying. (Be sure to use the right size Pot – general rule of thumb is for the oil to fill no more than 1/3 of the Pot to avoid spillage).
Method:
Washing of Chicken
In a large bowl, place whole chicken, lime juice and six (6) cups of water.
Allow to soak for 5mins.
Rinse chicken under running water.
Drain off excess water.
Seasoning of Chicken
In a large bowl, place chicken and massage seasoning mix onto chicken.
Cover and allow to marinate for at least 3hours.
Cooking of Chicken.
Pre heat oven to 375 degrees F.
Pre heat oil in pot to 350 degrees F.
Once oil is hot, add seasoned chicken.
Allow to fry until chicken is golden brown.
When chicken is golden brown, remove from oil, place on baking tray and into oven.
Let cook in oven for 40mins.
Using a food thermometer, check internal temperature of chicken. (Internal temperature should be over 165℉)
