YIELD: (6-8) SERVINGS
2 Lbs Potato
6 oz Butter
1/4 Cup Evaporated Milk
1 Lb Grated Cheese (Optional)
4 Bell Peppers (Optional) Cut in half, Remove core, Wash & set aside.
Salt and Black Pepper (to taste)
2 Lbs Minced Beef
2 Medium Onions
1 Bundle Celery
1 Cup Shredded Carrot
1 Slice of Bread
1/4 Cup Full Cream Milk
1/3 Cup Ketchup
4 Strips of Bacon
Peel, wash and dice potatoes into small pieces.
Boil potatoes until tender.
Strain and return to pot immediately.
Add butter, evaporated milk, salt and black pepper.
Mash until smooth.
Taste for salt.
(Optional) Fill peppers with potato and cover with cheese. Broil in oven until cheese is golden brown.
Preheat oven to 350°F
Finely chop onion and celery and set aside.
Grate carrots and set aside.
In a bowl add bread and milk. With your hands mix together until well incorporated.
In a separate bowl add minced beef, celery, carrots, bread mixture and eggs.
Mix until well incorporated.
Using a greased bowl pan add beef mixture and shape like a loaf of bread.
Cover top with ketchup and strips of bacon.
Bake for 45 minutes.
Once full cooked, let cool for 15-20 minutes before slicing.
