Oven-Baked Jerk Chicken Recipe

INGREDIENTS 

 

Whole Chicken - 3 1/2 lb

Onion - 1 Medium

Chive - 1 Bundle

Scotch Bonnet Pepper - 2 (Seeds Optional)

Garlic - 6 Cloves

Pimento - 4

Thyme - 1 Sprig

All Spice Powder - 1 Tbsp

Nutmeg - 1 Tsp

Five Spice Powder - 1 Tbsp

Black Pepper - 1 Tbsp

Salt - 1/2 Tsp

Soy Sauce - 1/2 Cup

Vegetable Oil - 1 Tbsp

 

METHOD

  1. Wash, clean and divide chicken into quarters. Set aside.

  2. Using a food processor, combine all the dry ingredients followed by the soy sauce and vegetable oil. (Liquid may splatter)

  3. Add mixture to chicken and massage well.

  4. Cover and let marinate for 8 hours or overnight.

  5. Preheat oven to 350°F.

  6. Place chicken onto baking sheet and bake uncovered for 45 minutes.
