Tamarind Pulp - 1 lb (Cleaned)
Brown Sugar - 1 lb
Brown Sugar (for coating) - 1/2 lb
Scotch Bonnet Pepper - 1/2 or To Taste (Seeds Optional)
Salt - To Taste
Place cleaned tamarind in a bowl.
Add 1/2 lb of sugar, salt and pepper and mix well.
Taste and add remaining sugar 1/4 cup at a time until desired sweetness is acquired.
Form balls to desired thickness.
Coat balls in sugar and enjoy.
